The skin of steamed bun is fine, thin and soft; the stuffing is fresh, delicious and mixed with self-made sesame oil; and it is so delicious that people salivate and cannot wait to enjoy this delicacy for continuous three days.

Day4    1-Day Food Tour: Beef and Offal in Chili Sauce

It is a famous flavor dish known by everyone in Chengdu. It said that in the 1930s, a man named Guo Chaohua and his wife made and sold cold cattle lung slices with sauce near Chengdu; this couple made the lung slices in person and sold along streets. For the fine process and unique flavor, people were very fond of the lung slices. To distinguish from common lung slices, people called the lung slices as "Beef and Offal in Chili Sauce". Since the lung slices are sold in the shop, the materials are finer, every lung slice is replaced by beef, heart, tongue, tripe and scalp, and the quality becomes better. the brand of "Beef and Offal in Chili Sauce" is used to remain the original flavor of this dish.

Day5    1-Day Food Tour: Pugai Noodles

To make a delicious Pugai Noodles, the flour must be mixed thoroughly with strength for more than 2 hours and thus the noodle worker or chief has enormous strength. After mixing, it is the critical step to pull the noodles to a bedspread shape, which will testify whether the noodles are mixed thoroughly. Take small flour dough, and then pull it to be thin with a diameter not less than 20cm. Please note that the good noodles must be large and thin enough that even can be seen through. Such thin noodles could be fully cooked in boiling water in several minutes. Plate it as soon as it is cooked (it looks great as it is very thin), and then add flavorings, diced meats and greaves and the most important mate soybeans.

Tofu Jelly with Hot and Sour Sauce is a famous snack in Chengdu and Leshan. Tofu jelly, a historical folk snack, was mainly sold via carrying along streets and was popular in urban and rural areas.

Tofu jelly is made through following steps: selecting the first-class soybean, socking the soybean with well water or river water, fully grinding into thick liquid, filtering off the bean dregs, boiling, and then pouring in the wooden barrel for standby, taking the glazed green sand cylinder, putting the sweet potato starch mixed with water and plaster water in the cylinder, pouring in the boiled soybean milk, and standing to make it solidifying into tofu jelly. Tofu Jelly with Hot and Sour Sauce is one kind of tofu jelly, which is made via using the soy sauce, vinegar, chili powder and gourmet powder to make flavor juice, putting it in the boiled tofu jelly, and sprinkling with sprouts flour, fried soybean, black salted turnip flour and chopped green onion.
