Xinjin：Food, Landscape, Brand New Experience
Xinjin located plain hinterland in Chengdu, which is suitable for agriculture for its flat terrain and rolling hills. The countryside lies beside the small rivers and lakes, peacefully and quietly. The view that trees and bamboos along with the sea of rice field is like a poetic painting.
Xinjin has a long and prosperous history. Thousands years ago, it had been paradise that ancient people lived in. In the autumn of 2012, I have been the archaeological site of Baodun , and the head of the site introduced some unearthed relics. He pointed out that the workers had found some fossils of plant seeds. After verifying, the seeds are that of cowpea, coix, pea, paddy and so on. This proves that at least at that time, people lived in Xinjin had been entered in the age of collection.
As the birthplace of the Yangtze river civilization, Chengdu plain is famous for its abundant natural resources. At the site of Sanxingdui and Jinsha, we saw many kinds of and lots of zoolites and many cookers which prove that the cooking skill at Ancient Shu has been wonderful. Xinjin is not only the important media of Ancient Shu civilization and traditional agriculture civilization but also the mainstay of ancient path culture. China National Highway 318, which is famous for the wonderful view, goes through Xinjin. Xinjin is a crucial courier station when the highway was not opened. The driver have got used to having a rest at Xinjin, which stimulates the catering service. Since ancient time, it has been the crucial transportation junction which reaches to Kang-Zang Highland, connects Panxi Plateau and the Southeast of Sichuan. When you open the history book, it seems that you can hear the walkers walking and see the ancients tramping over hills and dales.
From the long history, we find that Xinjin has been named this for a long time. It is recorded that in the year of 216 Li Yan, the governor of Jianwei, built a road connecting Chengdu and Meijia and a port. Then the place prospered and became a new market, named Xinjin. Afterwards people changed the name as Xinjin county, Wuyang station, and Wuyang district. Now it is named both Xinjin County and Wuyang district.
Abundant natural resources and key locations of water is the basis for creating delicious food. We believe that in this prosperous bossiness trade, there would be tea breaks and taverns along the road. The businessmen from the north and south chatted here and tasted the special food. In ancient time, most merchants would bring a cooker for that they can have hometown food even if in different places. We can never get rid of the homesick.
The two big migration in the history enriched the taste and varieties of Sichuan cuisine. In Qing dynasty, Sichuan cuisine began to take shape and develop. A famous poet and gastronome Shi Guanghua said that Sichuan cuisine gives us multi-sensory experience. People from different places bring us different diet custom. For example, chili, brought from foreign country, combined with pepper has been popular and swept the globe, then there are many other spicy tastes like fresh chili taste and Hu hot. Moreover, the fermented beans brought from Jiangxi has become a perfect flavor for coking double cooked pork slices. With the communication between western and eastern culture, the agriculture civilization has communicated a lot. Many foreign species like onion, carrot were brought in Sichuan and provided nutritious cooking ingredient for the advancement of delicacy.
A large number of ingredients are from foreign countries because of the well-developed transportation. As the cooking skills passed down from generation to generation, Xinjin food has been unique among Sichuan cuisine. Xinjijn food is famous for its freshwater fishes, special Sichuan cuisine and snacks and becomes a gourmet kingdom. The gourmet is of course cooked by the chefs. “The king of Sichuan cuisine” Wang Haiquan, “the master of Sichuan cuisine” Luo Guorong, “professor of cooking” Luo Changsong, “ambassador of cooking” Huang Ziyun, “the master of banquet” Bai Maozhou and other chefs make Xinjin food become popular and known by more people. They also have many apprentice and pass this food culture down.
The most convenient transportation is water carriage. As a crucial port, Xinjin has become the rest area of many intellectuals and businessmen. Ancient people were favor of travel. They sometime walk the earth with a sword or travel by paddling a boat, which attract us so much and make us wondering the free life. The poets of different ages leave us beautiful poems. When the great poet of Tang dynasty named Lu You traveled through here, he wrote poems to express his emotion, while Du Fu, with blue mood had written wonderful like “the mountains seem wait for my next traveling, the flowers and willows are show themselves selflessly. Wang Bo, a young man with brilliant mind had also left us a poetic masterpiece through the ages.
The ancient people leave us not only the poems and verses but plenty of precious architecture and formative arts. Chunyang Taoist Temple is rarely the ancestral temple which mainly worship Confucianist. Here, the representatives of Confucianism co-exist with gods of Taoist, bodhisattva of Buddhism and receive the pilgrimage for thousands of years. The wall painting in the temple were painted in Ming dynasty with traditional realistic painting, the color of which are multitudinous and remain its saturation. Both the form and spirit are tremendous. “The drifting avalokitesvara” that is celebrated in the temple is called “Vines on the East “by a famous antithetic named Wang Chaowen.
As social material civilization keeps developing, people’s need for intellectual and artistic product is also rising. Besides delicious food, people also care much about the dining environment. Xinjin has taken its advantage and developed a lot. They combine modern tourism with organic agriculture: the farm land is like gardens and here are delicious food in the garden. People taste gourmet, smelling flowers and listening to the birds. We all cannot resist that happy life.
